Best answer: To answer your main question: food poisoning occurs when you ingest bacteria that would cause food poisoning. It can be present naturally on some foods such as chicken, or on foods that have been contaminated. It can even be picked up by eating soft fruit straight from bushes that wild birds have access to. The door handles, taps etc. in public toilets and even the handles on shopping trollies can be contaminated too. It's very easy for the acteria tget into your mouth via your hands. There is nothing you say to suggest that your cocktail sausages were contaminated in this way.
Food doesn't "expire" so has no "expiry date". Many foods in Europe carry a "use by" or "beat before" date. These dates are useful when buying food - you have an idea how fresh it is and how long it will last. These dates are usually very conservative and, if stored correctly, even foods like meat should last well past any date on the package.
So far as actually eating the food, these dates are irrelevant as it will be quite obvious by looking at, smelling and, especially, tasting whether the food is still okay to eat or whether it has "gone off".
