Depends on your definition of “fresh”.
If you mean how long til it spoils, so long as it does not have condensation that gets it moist, it might last up to three weeks.
I have only one kind of bread that I buy, it’s the Pain Pauline from Trader Joe’s, a dense, whole wheat peasant type bread almost like a sourdough. It keeps in the fridge for 3 weeks or even longer before it goes bad. I keep it tightly wrapped in it’s original packaging. I typically only eat this bread toasted or in grilled cheese sandwiches so if it gets a little stale it doesn’t matter. It also makes excellent croutons, crostini, etc.
