Fried fish, dirty rice and pasta salad for dinner. Is that too much starch? if so what are some other alternatives to go with my fried fish?

    Grill or bake the fish and serve asparagus instead of the pasta salad

    Yes, by two side dishes. Since the fish is fried, you may want to opt for a green salad, and one or the other sides.

    Yeah, that's a lot of starch, but it tastes good. Maybe sub out Okra and Tomatoes for the pasta salad?

    You need more green vegetables than what little might be in the pasta salad. That IS too much startch, pasta and rice in the same meal.

    My trip to the farm market today gave me this to serve two for the next week+.

    $1 - 3 ears fresh sweet corn

    $3 - enough Brussels sprouts for two meals

    $3 - enough yellow beans for two meals

    $2 - one large head cauliflower, enough for 2-3 meals

    $1 - 4 ears sweet corn (from a different vendor; we always buy our 'eating off the cob' from the other place) for making a large batch of skillet corn that will be enough for 3 meals

    $10 for enough veggies to take care of 10-11 meals. Technically, the corn is also a starch. I can't eat certain green leafy veggies like spinach, chard, and kale because they contain super-high levels of a substance that leads to kidney stones in some people, and I am one. If not, I would be eating them every week. Quite cheap this time of year.

    Drop one of the starches and add a vegetable of some sort.

    I would do a sort of spicy roasted Brussels Sprouts or if you just want a green veggie spinach would be good. (the cooked spinach would be a quick, easy take on collard greens) Or the spinach as a fresh salad.

    I would have Broccoli florets

    or some good buttery corn along with the dirty rice.

    The pasta salad will keep for a few days,

    and will make a nice addition to a slightly different meal.
