Jelly, jam, or preserves? What's best and why is it preserves?

What you call it is a matter of opinion. Asking which is best makes no sense as jelly and jam are different things - jam has the fruit in as well as the juice, while jelly is just the juice.
All of them are preserves because they preserve the fruit.

"Preserves" can be a name for all of the items you mentioned because they are "preserved"
Jelly, a product usually made just from the juice of the fruit, pectin and sugar. Generally no seeds, skin or fruit bits.
Jam, a product made from the fruit as well as the juices, pectin and sugar. Usually contains fruit, sometimes seeds and skins.
