Is it excessive to use a soapy hand towel every day when I shower?
I shower once a day. Is the hand towel fine or is it too much exfoliation?

You shouldn't exfoliate every day, it's bad for your skin, but when you do -- why a hand towel? Use a wash cloth or a loofah or something else made for the purpose. Or use a body scrub.

I don't think it's excessive. A towel doesn't have very much abrasiveness to it.
I use a soft scrubbing sponge.

No, it should be fine to use. This is gentle exfoliation, and as long as you don't scrub at your skin it should be fine.
I would make sure that you use a new hand towel each time you bathe, leaving a hand towel in the damp bathroom can promote bacteria and mold growth. You don't want to try and clean yourself with a bacteria covered hand towel.

Why not use a flannel / face cloth instead of a towel, you can buy exfoliating ones that are soft on one side and textured on the other.

Exfoliation is good usually 3 times a week, any more and I think that's just overdoing it BUT we're all different. If you're not experiencing any dryness, irritation or sensitivity then by all means keep to your daily routine.
