Why didn't store owners defend their stores with guns like the korean store owners did during the LA riots of the early 90's?

Because the government agencies would rather prosecute them as criminals, than actually prosecuting the looters. Those who defend their livelihoods and families are are seen by mayors and governors as a symbol of their own inability to deliver the security and safety they wish to claim the exclusive right to provide.
