Soft refers to being non-alcoholic. "Hard" would be something that has alcohol.

Drinks with alcohol are considered hard (which had a few definitions such as powerful and potent) and so the opposite was called soft (also a definition of soft is having a pleasing quality involving a subtle effect or contrast rather than sharp definition) Originally any drink that didn't have alcohol was considered a soft drink, but today we usually use it to mean flavored carbonated beverages (with no alcohol)
