since there is a coin shortage in the U.S. now will cashiers not mind if I pay for everything in only coins ?

If they say YES!

Then I come back the next day with $2 or $3 in change and exchange it for bills.

Everyone is happy.

Within reason. Do not delay the checkout line like 10 or 15 minutes (!)

Even with the shortage, most cashiers wouldn't like it because it's a hassle, unless it's just a few dollars worth.

Part of the reason there is a shortage is that stores are not accepting cash.  "Cash" means coins as well.  So what you're asking doesn't really make sense.
