I know someone out there likes a single 16gb stick better considering the Thumbs down on David's good answer, but for gaming the 2x8gb kit reigns supreme....... and here's why.

Bandwidth and RAM speeds matter in modern games. In fact, having 2 higher speed RAM modules and enabling XMP on an unlocked motherboard is helpful. Having 2 sticks in the proper slots enable dual-channel mode which doubles the bandwidth. This isn't 2011 when RAM speeds didn't matter all that much, and 4-8gb of RAM was good enough. Go look up gaming benchmarks and you will see processors like the 10600k pulling ahead of the 10900k with a RAM overclock.

The part about RAM being able to dissipate heat is 100% false because even high speed RAM modules don't get that hot to begin with. Also, in theory sticks of a higher capacity will be more dense, or have double sided modules which will be prone to heat density if that theory was correct to begin with, which it isn't.

the motherboard of the computer tells you. some motherboards require parity, which means they need two 8BG RAM cards, whereas other motherboards can take one16BG card. check with manufacturer.

It's always better to have separate chips rather than one big chip having more area to dissipate heat allows your RAM chips to run at their best if you have one ram chip it can't possibly dissipate heat as well as two RAM chips

Most computers support a dual RAM channel when there are two identical modules, but there is also the ranking of the DIMMs. Some of them, especially the larger capacity memory modules, have two ranks on a single module and they are slower than a single rank module. You are likely to get the best performancewith two 8gb modules.

2x8GB, if they are a matched pair they can work in dual channel mode which is faster than a single 16GB RAM stick

One sixteen. It's less work to move data through one stick than it is two.
