how to pack paintings for shipping?

Just fold them up into as tight a package as you can, stuff them into an envelope and send them second-class.

Lots of unknowns here.
If the painting is mounted and framed, as a minimum you need a mirror/picture/TV carton which you cut to adjust so the four corners fit the frame's corners. If there's glass over the art, you put in additional cushioning like styrofoam peanuts. Prices and available sizes vary a lot, so shop around for these cartons. If there's glass, day-glo FRAGILE stickers are worth the added cost.
If there's a lot of art, and you're at all handy, you might find it easier to use pallet wood to make custom cartons that can hold several paintings of similar size.
If you're moving, fragile items ideally travel with you, not the van.
