IIRC it's what is now often called a shapeshifter.

One example would be Beorn (who makes an appearance in The Hobbit); he can change into a bear.

I wouldn't count the wizards into that group; they are actually Maiar and therefore something entirely different.

A shape-shifter like Radagast the Wizard, who can change appearance and look like an animal or whatever.  Werewolves would be an example of a skin changer.
