Yeast makes my dough soft,ideas that I can make good buns?

Yeast doesn't make dough soft. It makes it rise.
Too much liquid makes dough soft

are you making sweet or savory?
And yeast does not make them soft it makes them rise. It is the ratio of flour and liquid that will determine how soft the dough is. Also if it is enriched or not.
Savory: fold in sautéed garlic and some cheese. OR cheese, minced jalapeno peppers. OR a mixture of herbs.
Sweet: Sinnamon and sugar. OR cinnamon, sugar and add nuts and or dried fruit. OR Almond paste and some chocolate or some chopped almonds.

Yeast makes your dough rise, then you punch it down knead it a minute and shape your buns and place them on a lined sheet pan to rise for another hour then bake. Follow a recipe!
