What do you call a person who creates unnecessary conundrums to make knowledge and education seem more important than it is?

It is impossible to make knowledge and education more important than THEY are. The fact that you don't possess knowledge and education does not allow you to denigrate it.

Knowledge and education is EXTREMELY important. More important than anything else. With out knowledge you wouldn't know how to get water let along that you needed it.

Perhaps you are talking about a person who thinks and acts like they are better than other people because they have college degrees and such. For those people, I tend to use the word pompous.
