What do bees collect and use to create honey?

They collect nectar and puke it up and we eat it because bee puke tastes good.

everyone answered part of your question except for why they make honey.
The reason is to store food for the cold months. In colder months, like winter, fruits are not becoming sweet, and flowers are not blooming, so naturally there is no food for bee's, but they'll use the stored honey for sugars.

The collect natural sugars, such as nectar. Bee's also go for fruit that is bruised or even rotten. I kid you not- bee's can get drunk if the fruit has fermented.
Yes the bees eat it and regurgitate it. They store it in cells made out of what could be construed to be bee sweat.
